Peel and cut potatoes to size you want. Obviously the smaller the better, the quicker. The 1 cm cubes are the tastiest

Boil your water. Chuck in the chipped spuds. Cook a bit until you can stick a knife through. This is the difficult hard part. It's more than parboiled but not too floury.

Then take good fine sieve. Chuck the cooked spuds into the sieve and toss them evenly. They should all be fluffy. This is the starch coming out which gives you nicely browned chips spuds.

Next put olive oil in a frying pan. Heat a bit then chuck in spuds. Turn up heat to max depending on cooker. If they burn, turn down. But you need the oil to be very hot without making them charcoal.
