Description
Preheat the oven to 150 degrees C Combine oats, nuts and coconut in a large bowl.

Heat the oil, honey, butter, brown sugar and spices on the stove top. Heat on low until everything melts, then turn up the heat until it foams. Continue to stir until the mixture caramelizes and the sugar is no longer grainy (be careful not to overcook at this point)

Pour the liquid mixture into the dry ingredients and ensure it is completely covered. Put into the oven for 30 minutes. After 30 min check it. It should not be wet looking. Continue cooking in 5 min increments until cooked.

Scrape the mixture onto a hard clean and non-stick worksurface (we used a silicon baking sheet). Make a trough in the middle of the mixture and add the dried fruit. Mix everything together and then spread it out in a thin layer about half an inch thick. This will ensure it dries with a crunchy texture. Let it sit until cool and crunchy and enjoy!
